Chocolate Fudge Cake For One (Gluten, Dairy, & Sugar-Free)

Sometimes, you just need a chocolate dessert that you can quickly put together without having to spend a lot of time in the kitchen. Well, I have your answer right here...my personal-sized Chocolate Fudge Cake ready in just five minutes. The best part, I don't have to deal with an oven in this recipe which makes it even better!

This Chocolate Fudge Cake is my go-to favorite dessert. It's gluten, dairy and sugar-free, but you would never know it. In fact, I have a little confession, I have enjoyed this every single night this week...but that's ok! It's healthy, and only made with real-food ingredients...and ZERO sugar! It doesn't get much better than that!

What You Need To Make This Mug Cake

  • blanched almond flour
  • cocoa powder
  • SweetLeaf Stevia (see recipe notes)
  • baking soda
  • almond milk
  • almond butter
  • vanilla extract
  • dairy/sugar-free chocolate chips

How To Make This Chocolate Fudge Cake

  • In an oven safe ramekin, mix together dry ingredients...almond flour, cocoa powder, Stevia, and baking soda.
  • Next, add the wet ingredients...almond milk, almond butter and vanilla extract. Stir all ingredients until fully mixed together.
  • Microwave for 45 seconds to 1 minute, or until risen.
  • Top with dairy/sugar-free chocolate chips.

This cake does not contain an egg which makes this dessert even more worth it, no extra work! Also, I included almond butter, which really gives it the perfect, soft texture and moisture. It adds so much and you don't even taste the almond butter. Adding the almond butter is the secret here!

***I don't usually advise using a microwave, but sometimes you just need a quick and easy dessert.

When I have a chocolate craving and want to make up something quick and easy, this cake is it.  I can have this ready in no time...all you need is just a few minutes and you will have the most delicious and satisfying dessert ready to be enjoyed.

A Few Tips

This cake fits perfectly in an eight ounce oven safe ramekin. Make sure you don't use anything smaller or the cake will overflow onto the dish and make a mess in the microwave.

Right after cooking, make sure to add the chocolate chips so they will melt. Let them sit for a minute or two, but do eat this right away so the cake will still be warm and most enjoyable.

A glass of almond milk is a must, and vanilla coconut milk ice cream would be a great addition too!

    Sometimes, I may drizzle a little extra natural sweetness for my family, pure maple syrup that is. To me, it's sweet enough and I like to keep it sugar free myself. (See Recipe Notes)

Notes

Microwaves cook differently, of course.  Cooking times may vary.  Start with 45 seconds and if additional cooking time is needed, only add 10 second increments at a time.  I usually don't advise using a microwave, but sometimes you just have to have a quick and easy dessert.

I love the mug cake just like it is, but sometimes I may drizzle a little extra natural sweetness for my family, pure maple syrup that is. To me, it's sweet enough and I like to keep it sugar free.  So, keep in mind, if you add maple syrup, it will add natural sugar.
