  • 1 Oven Safe Ramekin

  • In an oven safe ramekin, mix together dry ingredients...almond flour, cocoa powder, Stevia, and baking soda.
  • Next, add the wet ingredients...almond milk, almond butter and vanilla extract.
  • Stir all ingredients until fully mixed together.
  • Microwave for 45 seconds to 1 minute, or until risen. (see recipes notes)
  • Top with dairy/sugar-free chocolate chips.
    Sometimes, I may drizzle a little extra natural sweetness for my family, pure maple syrup that is. To me, it's sweet enough and I like to keep it sugar free myself. (See Recipe Notes)

Notes

Microwaves cook differently, of course.  Cooking times may vary.  Start with 45 seconds and if additional cooking time is needed, only add 10 second increments at a time.  I usually don't advise using a microwave, but sometimes you just have to have a quick and easy dessert.
Right after cooking, make sure to add the chocolate chips so they will melt. Let them sit for a minute or two, but do eat this right away so the cake will still be warm.
I love the mug cake just like it is, but sometimes I may drizzle a little extra natural sweetness for my family, pure maple syrup that is. To me, it's sweet enough and I like to keep it sugar free.  So, keep in mind, if you add maple syrup, it will add natural sugar.
