Sweet Potato Hash-N-Eggs (Paleo & Whole30)

  • Iron Skillet
  • Stainless Steel Chopping Knife

Ingredients
  

  • 2 medium sweet potatoes, diced
  • 1 onion, diced
  • 4 cloves minced garlic
  • 2-3 tablespoons avocado oil
  • 1 teaspoon cumin
  • sea salt (see recipe notes)
  • 4 pasture-raised eggs
  • fresh cilantro

Instructions
 

  • Preheat oven to 400 degrees.
  • Chop sweet potatoes and onions into small diced pieces.
  • Add 2-3 tablespoons avocado oil to a 10 inch cast-iron skillet and sauté sweet potatoes, onions and spices together. Cook for 10-12 minutes until sweet potatoes are crisp & caramelized, stirring often.
  • Stir in minced garlic for about 1 minute, until fragrant.
  • Next, make 4 wells in the hash and crack an egg in each.
  • Put in 400 degree oven and cook 10-15 minutes or until the whites are set to your liking.
  • Take out of oven, garnish with cilantro and sprinkle with sea salt. Enjoy!

Notes

Do make sure to add sea salt to your individual serving if needed.  Sea salt is what brings all the flavors out for the dish to taste its best.  Also, from time to time, I like to add sugar/nitrate-free bacon for a special treat.  This dish is amazing like it is, but bacon does add an extra layer of flavor.
