Asian Sesame Honey Chicken (Paleo & Gluten-Free)

Ingredients
  

For the chicken:

For the sesame sauce:

For garnish:

  • 2-3 tablespoons sesame seeds
  • 2 chopped scallions
  • serve over cauliflower rice

Instructions
 

  • In a small bowl, whisk all of the sauce ingredients together and set aside.
  • Next, combine almond flour, 1/2 cup tapioca flour & sea salt together in a bowl
  • Whisk egg and almond milk together on a plate or shallow bowl.
  • Dip and coat chicken pieces first in egg mixture followed by flour mixture, shaking off excess flour.
  • Place 1/4 cup or more of avocado oil in cast iron skillet on medium high heat.
  • Once your skillet is really hot, brown each piece of chicken 3-4 minutes on each side.
  • After all chicken is browned, place chicken in a 350 degree oven for 15 to 20 minutes to finish cooking, until desired crispiness is reached.
  • While chicken is cooking, add sauce ingredients to a smaller cast iron skillet and simmer on low until thickened.
  • Lastly, pour sesame sauce over the chicken and toss to coat. 
  • Serve over cauliflower rice and garnish with sesame seeds and green scallions. Add sea salt to taste. The sea salt will bring out all the flavors. Enjoy!

Notes

I use at least 1/2 cup of honey in the sauce but sometimes I add an extra 1/4 cup of honey and a few more tablespoons of coconut aminos and sesame oil to make a little extra sauce.  If the sauce seems too thick, you can always add a little coconut aminos to thin it out.  Add more avocado oil to pan if needed when frying chicken.  Also, you may need extra flour when coating.  Make sure to pour extra sesame sauce over the rice and chicken and add sea salt to taste.   Also, I like to make this experience extra fun for my family with chopsticks.
