Preheat oven to 425 and line a baking sheet with parchment paper.
Heat avocado oil in skillet and sauté onion for 3-4 minutes over medium heat.
Add ground beef and cook, stirring often, breaking up into smaller pieces until fully cooked through, about 5-7 minutes.
Stir in garlic about 1 minute until fragrant.
Next, add spices and coconut aminos to the ground beef and simmer 2-3 minutes more.
Transfer meat to a bowl and let cool for a couple of minutes.
While meat mixture is cooling, chop and prepare toppings.
Mix dairy-free cream cheese into the meat mixture. This adds flavor and makes it easier to roll up tortillas.
Heat the almond flour tortillas for a few minutes in oven or microwave right before adding the filling mixture. This helps the tortillas roll up without breaking.
Stuff each tortilla with ground beef mixture and tightly roll.
Lay each tortilla on sheet pan, brush with avocado oil and bake for 20 to 25 minutes until crispy and browned. Make sure to start checking at 20 minutes. Top tortillas with your favorite toppings and cream sauce. We like to dip the tortillas in coconut aminos. Enjoy!
