Oven Roasted Turkey Breast (Paleo & Whole30)

Equipment

  • Roasting Pan With Rack
  • Digital Meat Thermometer 

Ingredients
  

  • 1 whole turkey breast with skin (3-4 pounds)
  • 4 tablespoons avocado oil
  • 2 1/2 teaspoons sea salt
  • 1 teaspoon black pepper
  • fresh thyme for garnish (optional)

Instructions
 

  • Preheat your oven to 325 degrees.
  • Spray your roasting rack with avocado oil and place your turkey skin side up on the rack. 
  • Pat the turkey with paper towels to remove excess moisture.
  • In a small bowl, mix together avocado oil, sea salt and pepper and rub all over top of the turkey.
  • Roast the turkey for 1 1/2 hours at 325 degrees.
  • Turn your oven temperature up to 500 degrees and finish cooking the turkey for 20 to 30 minutes. This will also crisp up the skin. (see recipe notes)
  • Remove the turkey from the oven and check the temperature with your
    Digital Meat Thermometer . Make sure the temperature reads 160 degrees.
  • Cover the turkey loosely with foil and let it rest for 20-30 minutes before carving.
  • Garnish with fresh thyme and enjoy!

Notes

All ovens vary and depending on the size of your turkey breast will determine how long it needs to cook.  It will be finished cooking when it reaches 160 degrees. Cook longer if needed. A Digital Meat Thermometer is a must!  Also, you can baste with more avocado oil to finish the cooking process if you prefer.  Sometimes I do this when browning the skin.
