Spicy Roasted Pumpkin Seeds (Paleo & Gluten-Free)

I thought I would surprise my daughters with their very own pumpkin and let them create whatever came to mind. Well, they turned these pumpkins into some pretty awesome treats and they are sharing one of them with you today...spicy roasted pumpkin seeds.   

What You Need To Make These Spicy Roasted Pumpkin Seeds

  • pumpkin seeds
  • avocado oil
  • chili powder
  • paprika
  • garlic powder
  • sea salt

This recipe is really pretty simple and uses just a few spices that I always have on hand. Of course, if you do not care for spicy foods, you could always use less chili powder or leave it out completely.

How To Make These Spicy Roasted Pumpkin Seeds

  • Scoop out and rinse seeds in a colander.
  • Thoroughly dry the seeds with a paper towel.
  • In a medium size bowl, combine pumpkin seeds, avocado oil, chili powder, paprika, garlic powder and sea salt, toss to coat.
  • Spread on a parchment paper lined baking sheet; bake until puffed and browned, about 20 minutes or a few minutes longer for extra crispiness. Make sure to stir a couple of times during the roasting process for even browning and to prevent burning.

The first step is to scoop out the seeds, rinse and dry them with paper towels. It is very important to remove as much moisture as possible to prevent the seeds from steaming and being soft. This process will help crisp up the seeds while roasting.

The seeds are then mixed together in a small bowl, followed by spreading them out on a parchment-lined baking sheet. The seasoned pumpkin seeds are then roasted at 350 for about 15 to 20 minutes or until desired brownness is reached. Take them out of oven, let them cool for a few minutes and they are ready to go.

A Few Tips

  • Make sure pumpkin seeds are really dry so they will crisp up to get the best texture.
  • Keep an eye on the seeds to prevent burning.
  • Stir several times throughout the roasting process.
  • Cook seeds longer for extra crispiness if you wish.
  • Add more sea salt if needed for best flavor.

Let me warn you, these are pretty addictive! We love store-bought pumpkin seeds, but there is just something special when roasting them from scratch. This was a fun little project for my girls and memories we will treasure forever.

Notes

All ovens cook differently.  Make sure to keep an eye on the seeds to prevent burning.
