This Pumpkin Pie Smoothie is a favorite all year-round, not just in the Autumn season. It's Paleo, dairy & sugar-free, making it a healthy little treat.
What kid, (or adult for that matter), wouldn’t want to wake up to this? If you love pumpkin pie, you’re gonna love this pumpkin pie smoothie. My family gets pretty excited when I hand them one of these for breakfast. And what makes me happy, is the fact it’s packed full of antioxidants, nutrients, fiber and protein...not to mention so easy to make. Pumpkin is highly nutritious and rich in Vitamin A, Lutein and Zeaxanthin, which helps in protecting eyesight. Smoothies are a great way to start the day by getting lots of good nutrition in your system.
I like to keep these smoothies dairy free and coconut milk is perfect for this recipe. Coconut milk helps give it a creamy texture. Also, my goal is to incorporate plenty of protein and keep these low in sugar.
My favorite protein to add to our smoothies is Vital Proteins Collagen Protein Powder. By adding protein, it will help keep you feeling full and satisfied. Protein is also the key to lose and maintain weight.
Collagen is the vital building block of our bodies including skin, hair, nails, bones and joints, (just to name a few). Our bodies cannot synthesize enough collagen on their own and it decreases as we age. Modern foods contain minimal collagen so it is very important that we are supplementing with a high quality collagen supplement.
I love the fact that collagen can boost brain health, therefore producing better mood, sleep and focus. This is why I love to start our day adding this to our smoothies, especially on school and work days, (when we need to focus the most).
The most important thing to remember, no matter what smoothie you are making, always keep the sugar content low, (or you are defeating the purpose). I always choose to use Stevia in my smoothies.
I must mention here though, not all Stevia is created equal. Most on the market are made from GMO corn, which can cause a whole list of health concerns. Besides that, corn raises blood sugar which causes health concerns as well.SweetLeaf Stevia is the only Stevia sweetener that I use and trust. You can’t go wrong with an all-natural zero-sugar sweetener.
It doesn’t take much, a little goes a long way. Half to one teaspoon for this recipe usually works for me. You can always add more if you like your shakes a little sweeter.
It's that simple.I throw all the ingredients into the blender, and just like that, you have the creamiest, most delicious tasting breakfast treat in seconds. I love to top it off with a little coconut cream and cinnamon. I pretty much make protein smoothies/shakes every single day, sometimes twice a day for my family. Most of the time we go with my chocolate smoothie, but this pumpkin one is great to change it up every now and then. We love these for breakfast and often in the evening for a special treat.
