Paleo Chocolate Chip Blondies (Gluten, Dairy, & Refined Sugar-Free)

These Paleo Chocolate Chip Blondies are absolutely delicious and made with real-food ingredients…gluten, dairy & refined sugar-free!

I never thought I would say this, but these Chocolate Chip Blondies have become my new favorite...OVER chocolate brownies! I really don't know what took me so long to give blondies a try. As a matter of fact, my whole family prefers these over chocolate brownies now.

My absolute favorite dessert has always been chocolate chip cookies and brownies. What better to combine the two together...this is like a dream!

Ingredients To Make Chocolate Chip Blondies

To make these blondie bars you will need:

  • almond flour
  • coconut flour
  • almond butter
  • baking soda
  • coconut oil
  • maple syrup
  • coconut sugar
  • vanilla extract
  • sea salt

The almond butter gives these bars the perfect soft and chewy texture. I like to use coconut sugar and maple syrup together to give the best sweetness. And almond and coconut flour keeps them gluten free, low carb and full of fiber.

I must mention here, my husband is not much of a dessert person. Well, the first time I made these, he asked if I could make another batch. So obviously there is never any leftovers!

No matter what dessert I choose to make, I always use my favorite paleo gluten free flours, natural sugars and oils that I always have on hand. So, I'm usually prepared with ingredients whenever we have a dessert craving like this one.

How To Make These Chocolate Chip Blondies

Preheat oven to 350 degrees.

Line an 8x8 baking dish with parchment paper. Make sure to leave a 2-3 inch overhang on all sides to make it easier to remove the bars from the dish. 

In a medium sized bowl, mix together all of the ingredients. I like to start with the wet ingredients first followed by the dry ingredients. Make sure all ingredients are completely mixed together. It will be a wet & sticky batter.

Press the dough into the baking dish with a rubber spatula and bake for 25 minutes. You might have to use your fingers as well.

Cool completely for about 10 to 15 minutes.

Best Blondie Recipe Tips

  • Make sure to preheat oven. If the oven is not preheated properly, the blondies will not be completely finished baking at 25 minutes or have that beautiful crackly topping you see here.
  • Let batter sit for 2-3 minutes. Before putting the batter into the baking dish, let the batter sit for a few minutes so the flours can thicken a bit.
  • Wait for the blondies to cool. This is so hard to do, but it is important so they don't fall apart. Plus, they will be chewier and have the best texture.

How To Store These Bars

These bars need to be stored in an airtight container. I never have to worry about this part because there is never any left! My family devours them!

Can these bars be stored in the freezer?

Absolutely! Make sure to put them in an airtight container before freezing. When ready to enjoy, pull the bars out of the freezer and let thaw for a few minutes at room temperature or heat for a few seconds.

  • Cool completely for about 10 to 15 minutes and cut into 9 bars. Enjoy!

Notes

Make sure to use almond butter that is not too thick, but a little runny.  Sometimes we use crunchy almond butter as well.  Keep in mind, depending on the brand of flours and almond butter you use, the batter could turn out either thick or thinner.  My recipe with the ingredients I have linked, the batter is on the thick side and works perfectly for this recipe.   If you feel your batter is too thick, you could add a little more coconut oil, one teaspoon at a time.  If the batter is on the thinner side, you could add a tablespoon more of coconut flour or almond flour.  Coconut flour really absorbs moisture more than almond flour.   Coconut flour may need to settle into the batter or dough before you can tell if it is the right consistency.  Before you think about adding more, try letting the batter rest for a minute or two to see if it thickens on its own.
