What’s not to love about bagels? There are so many varieties and I love everyone of them. But as most of you know, grains, gluten and yeast don’t make me or my family feel very well because of all of the inflammatory properties in these ingredients.
So what’s a girl to do, especially a mom whose kids LOVE Panera Bread bagels but are complaining of stomach issues and headaches(?) For the past few years I have been experimenting and making our own bagels at home. I really don’t know what took me so long. Maybe it seemed a little intimidating, but it’s really quite simple.
This past weekend, I tweaked, tested & perfected my bagel recipe and can finally say I am happy and pleased with it. My little taste-testers asked for more, even my husband…so that’s how I know and determine if I’m satisfied with my recipe.
Ingredients Used To Make These Bagels
avocado oil
maple syrup
filtered water
apple cider vinegar
almond flour
tapioca flour
baking powder
sea salt
avocado oil spray
These bagels are made with almond and tapioca flour, myhealthy flour alternatives that I recommend. If you stick to these flours when baking, it is just fine to enjoy all your favorite baked goods. You absolutely don't need one ounce of man-made white flour, sugars or yeast!
What's The Problem With Yeast?
Yeast is a type of single-celled fungi that lives in colonies and requires moisture and warmth to thrive. Under certain circumstances, however, yeast can become harmful, particularly if it is given opportunity to flourish in the gut. There is a lot of compelling evidence that yeast and fungus play a role in a number of the health problems people face, according to author, researcher and fungus expert, Doug Kaufmann, (knowthecause.com). This is why I have chosen to eliminate yeast from mine and my family's diet. Why put it in your body when you can avoid it?
Cinnamon-Sugar Topping

Coconut sugar and cinnamon give these the perfect sweetness. I love that coconut sugar is Paleo, low-glycemic, and contains vitamins, minerals and phytonutrients. Coconut sugar also contains inulin which has probiotic, gut-healing properties. Cinnamon is great because this spice can help prevent diabetes. I add it to so many of my baked goods for this purpose.
How To Make These Bagels
Preheat oven to 350 degrees.
In a large bowl, whisk together the almond flour, tapioca flour, baking powder and sea salt. In a separate bowl, whisk together apple cider vinegar, avocado oil, water and maple syrup. Add the wet ingredients to the dry ingredients and combine until smooth. The dough should be somewhat wet and sticky.
Mix together coconut sugar and cinnamon and set aside.
Spray a doughnut panwith avocado spray. Sprinkle each section with cinnamon-sugar mixture.
Next, insert dough into a piping bag or gallon size freezer bag. Cut the tip off with scissors and pipe the batter until each one is filled. Spread and pat with fingers or a spatula to evenly distribute the dough batter.
Sprinkle the top of each one liberally with cinnamon-sugar mixture.
Bake bagels for 20 to 25 minutes until somewhat firm to touch. I usually go the full 25 minutes.
Remove from oven and cool a few minutes before removing from pan.
Add more cinnamon-sugar if desired. Serve warm.
These maple cinnamon-sugar bagels are my version of one of my favorites at Panera Bread… except I actually love the texture and taste of mine better. I haven’t had a Panera Bread bagel in years and I sure don’t miss the knee and back pain that follow. I’ll take my bagels over theirs any day!

After cutting the bagels in half, toast under a broiler for a minute or two.
Add more cinnamon-sugar & dairy free cream cheese if desired. Serve warm. Enjoy!
Notes
Make sure to start checking bagels at 20 minutes. I usually go the full 25 minutes. These are best when toasted. So when you cut the bagels in half, make sure to toast them under the broiler for a minute or two before adding dairy free cream cheese.
