Creamy "Chicken-N-Rice" Soup (Low Carb & Dairy-Free)

I'm so happy to share my absolute favorite soup that I make often. It doesn’t matter what time of year it is, this soup stays on the menu year 'round at our house because we love it so much.

Why This Is My Absolute Favorite Soup

Besides being one of the most comforting and coziest soups, it's one of the most nourishing, packed with so much nutrition. Carrots, celery, onions and garlic are powerhouse vegetables, full of essential vitamins and nutrients that our bodies need to thrive.

There’s not a better natural healing remedy for "what ails you" than the tried and true chicken soup. I mean, when you throw chicken, onions, celery, garlic carrots and bone broth together, something miraculous happens.  It’s just so comforting and definitely full of so many healing properties.  It just makes you feel better almost instantly. And the best part, these vegetables are very low in calories and rich in fiber to keep you feeling full...therefore making it easier to burn and lose fat.

What You Need To Make This Chicken-N-Rice Soup

  • avocado oil
  • onion
  • carrot
  • celery
  • garlic
  • chicken bone broth
  • full fat canned coconut milk or cream
  • organic chicken
  • cauliflower rice
  • parsley
  • sea salt

One Of My Favorite Food Swaps

I also LOVE cauliflower rice. It is a low-carb staple I keep on hand for so many of my recipes. My secret is frozen riced cauliflower which saves me SO much time. Cauliflower has so many health benefits and my family can't even tell the difference, (that it's not the traditional white rice).

I made the switch to cauliflower years ago because white rice has a high glycemic index, meaning that it can cause spikes in blood sugar. Research proves these types of foods put one at risk of developing type 2 diabetes, among other health concerns. When eating high glycemic foods, weight gain is inevitable. Making this one switch gives me the green light to enjoy another serving of this soup if I wish.

How To Make This Chicken-N-Rice Soup

  • Heat avocado oil in a large stockpot or dutch oven over medium heat.
  • Add onions, carrots and celery to pot and cook 8-10 minutes until soft and translucent. Stir in garlic for about 1 minute until fragrant.
  • Next, stir in shredded cooked chicken, cauliflower rice, chicken broth, sea salt and canned coconut milk. Simmer for 25 to 30 minutes until vegetables are fork tender.
  • Add a little more sea salt to taste if needed.
  • Garnish with fresh parsley and enjoy!

Ingredients
  

  • 1-2 tablespoons avocado oil
  • 1 onion, chopped
  • 6-7 carrots, chopped
  • 5 celery stalks, chopped
  • 5 cloves minced garlic
  • 5 cups chicken bone broth
  • 1 can full-fat coconut milk or cream
  • 2 organic chicken breasts (cooked and shredded)
  • 32 ounces riced cauiflower
  • 1/4 cup chopped fresh parsley, optional
  • 2 1/2 teaspoons sea salt

Instructions
 

  • Heat avocado oil in a large stockpot or dutch oven over medium heat.
  • Add onions, carrots and celery to pot and cook 8-10 minutes until soft and translucent. Stir in garlic for about 1 minute until fragrant.
  • Next, stir in shredded cooked chicken, cauliflower rice, chicken broth, sea salt and canned coconut milk. Simmer for 25-30 minutes until vegetables are fork tender.

Notes

Add more chicken bone broth and sea salt if needed.  The sea salt is the key to bring out the flavors.  We usually add more sea salt to our individual soup bowls.
