Copycat Taco Bell Mexican Pizza

During my teenage years, my all-time favorite fast-food restaurant was Taco Bell. My grandmother and I would visit this place quite often. I would usually always order the crunchy beef tacos, but as soon as the Mexican Pizza hit the scene, I was hooked! I mean, what's not to love? It consisted of flavorfully seasoned ground beef and refried beans layered between two crispy tortilla shells topped with cheese, sour cream and that special taco sauce. So delicious! Tacos and pizza combined...what a dream!

Fast forward to today. If you have followed my recipes for a while, you know one of my passions is to recreate dishes that I remember and loved growing up. A few years back, I had a craving for Mexican Pizza and put myself to the challenge to come up with my very own version, (of course on the healthier side). I tried to make it as close to the real thing as I could. I am pretty happy with the way it turned out. It really did satisfy my craving, especially knowing my version isn’t going to make me feel bad after eating it.

Back in my Taco Bell days, I didn't feel so well after eating there. And without a doubt, knowing what I know now, Taco Bell food definitely contributed to a lot of health issues I was dealing with.

Thankfully, those issues are a thing of the past because I have eliminated fast foods out of my diet. And let me tell you, I feel better now in my 40s than I did in my teenage years. I haven't missed those foods one bit now that I know how to recreate all of my favorites from my childhood.

To make this yummy pizza possible, I am incredibly thankful for Siete Foods, (a Mexican-American Food Brand that makes real food products, free from gluten, dairy, corn, soy and canola oil). This company has created a whole new world for the health community with all of the products that they have to offer. I have brought so many of my favorite dishes back into my life because of Siete. In this recipe, I use their Almond Flour Tortillas, canola oil free Refried Beans & Enchilada Sauce.

What You Need To Make A Taco Bell Mexican Pizza

Special "Taco Bell" Sauce

Mexican Pizza Toppings

  • Dairy-Free Sour Cream
  • Black Olives
  • Tomatoes
  • Green Onion

How To Make A Taco Bell Mexican Pizza

  • Preheat oven to 400 degrees. 
  • Heat one tablespoon of avocado oil in a skillet over medium heat.  Add ground beef and cook, stirring often, breaking up into smaller pieces until fully cooked through, about 5-7 minutes.
  • While meat is cooking, mix the special sauce ingredients together and set aside.
  • Add all the spices, beef bone broth and 1/4 cup of the special sauce to the meat and heat up for a couple of more minutes.
  • Place tortilla shells on a parchment paper lined baking sheet and brush with remaining avocado oil.  Put the shells in the oven and crisp up.  I usually put under the broiler for about a minute, (watch them very closely so they do not burn).
  • Take out of the oven and evenly spread 2 tablespoons of refried beans and then 1/4 cup of meat mixture on bottom layer tortilla.
  • Next, add second tortilla on top.  Spread with a couple of tablespoons of the special sauce followed by cheese on top of the tortilla.  Don't add too much sauce or the pizzas will turn out soggy. Repeat these steps with the remaining tortillas to make 4 pizzas. Put back under the broiler for another minute until cheese melts. If not using broiler, this will take 7-8 minutes in the oven.  (see recipe notes)
  • Take out of the oven and add your favorite toppings and extra sauce.
  • Slice with a pizza cutter and enjoy!

Tips For The Best Mexican Pizza

  • Purchase the small Siete Almond Flour Tortillas, (the burrito size will be too big for this recipe).
  • When cooking the beef, break up into really small pieces for the filling to stay together properly. No matter what recipe I make with ground beef, I always make sure to break it into small pieces. I'm not a fan of big pieces of ground beef.
  • Make sure to add extra sauce before serving for best flavor!

Notes

My oven is a little different than most, I don't have that top heating element.  So therefore, I like to put my tortilla shells under the broiler, (in my broiler drawer) to crisp up properly and quicker.  Keep in mind, if you just put it in the oven, the cooking time will take a little longer than the broiler method.  but do watch closely, it doesn't take long and will burn.  When using dairy free cheese, I always put under the broiler to be able to melt the cheese.
